The contention that certain food intolerances and allergies can be associated with weight gain is embroiled in considerable controversy. Evidence is mounting, however, that this is precisely the case. This is not that surprising given what we know of the wide ranging effects of food intolerance and allergies in regard to other aspects of human health and welfare and, in fact, given what we know of the impacts of obesity itself. Obesity observes no geographic or socioeconomic boundaries and neither do food allergies/intolerances. Obesity can be found throughout the population in individuals ranging from infants to those that are quite elderly. In all, obesity is estimated as affecting thirty-four percent of Americans (Ridings, Rapp, Boosalis, and Pomeroy, 1998). Obesity is considered one of the most common problems demanding the attention of the primary care physician (Ridings, Rapp, Boosalis, and Pomeroy, 1998). Millions of Americans, in fact, can be classified as obese. Obesity, or even less extreme cases of excess weight can lead to a number of physiological and mental consequences, not the least of which are conditions like inflammatory bowel disease, anxiety, depression, and even heart disease (Aldorato et. al., 1997). While not all cases of obesity can be related to food allergies/intolerances, it is likely that many can. Food intolerances and allergies are a fact of life. An estimated seventy to eighty percent of chronically ill individuals in the U.S. suffer partially as a result of food intolerances (Obesity, Fitness & Wellness Week, 2001). Food intolerances and allergies can cause nausea, vomiting, diarrhea, eczema, migraine, depression, fatigue and a diversity of other problems.
