This online article, which is a site sponsored by Cornell University, there is a strong evidence from epidemiological studies that increasing consumption of fruits and vegetables can play a role in reducing cancer risk. This is particularly true for vegetables, and the authors emphasize that vegetables high in carotenoids and vitamin C, such as carrots and other yellow-orange vegetables, as well as dark green vegetables, such as broccoli and spinach, are particularly protective (Napieralski and Devine, 1998). In a large cohort study entitled the Nurses Health Study, it was found that women who consumed at least two servings per day of fruits and vegetables had a 17 percent lower rate of breast cancer than women who consumed less than 1 serving per day (Napieralski and Devine, 1998). In another study, the consumption of five or more servings per day was associated with a 54 percent reduction in the breast cancer rate (Napieralski and Devine, 1998). Research findings such as these were found to be so conclusive by the National Cancer Institute that educational nutritional programs were designed to promote the concept of eating five or more servings a day as a means of promoting overall health (Napieralski and Devine, 1998). The USDA food guide pyramid also suggests that five to nine servings of fruits and vegetables should be part of a daily diet. it is believed that the chemicals found in fruits and vegetables may reduce breast cancer risk via several mechanisms. For example, cancer cells ignore all bodily signals to stop cell division; they do not differentiate properly. Carotenoid-derived vitamin A, which is found in fruits and vegetables, may work to reduce breast cancer by encouraging cell differentiation, which interferes with the process of uncontrolled cancer cell division (Napieralski and Devine, 1998).
