Food strategies must not merely be directed at ensuring food security for all, but must also achieve the consumption of adequate quantities of safe and good quality foods that together make up a healthy diet. Any recommendation to that effect will have implications for all components in the food chain (World Health Organization, 2003, p. 13). With so many healthy choices readily available to the consumer, why is it that so many people make unhealthy choices? The occasional burger and fries from a fast food place creates no real problem for a body that is otherwise fortified with a balanced combination of fruits, vegetables, grains and lean protein. However, when the occasional fast food meal becomes a staple of ones regular diet, the body manifests the high sodium and fat, excess calories and empty carbohydrates in such negative ways obesity and disease. The ease with which nutrient-depleted foods can be obtained coupled with their calorie-packed alternative to more healthful choices is, according to Marion Nestle - New York Universitys professor of nutrition, food studies and public health - a primary reason why junk food is chosen over other options, noting how "this is the single most important factor influencing food choice" (Schneider, 2005, p. 798).
