Ports, such as Lentini in Sicily, grew wealthy from their location close to grain fields (Wright). Lentini also was strategically located in that ships loaded with grain from Italy had a shorter crossing to Spain from Sicily than from Tuscany and therefore preferred the Sicilian port (Wright). As this indicates, Italian cuisine involves a fascinating mix of historical, economical and geographical information. From a historical viewpoint, it is possible to find recipes that date from the days of ancient Rome. For example, the Romans made cheesecake by first creating a bread by combining ricotta cheese, egg and flour and then soaking these buns in honey (Ancient Roman Cheesecake). Also, economic and practical factors enter into what people choose to eat. For instance, dried pasta, a popular stable in Italy made from durum wheat, was popular on long sea voyages because of its nutritional value and long shelf life (Demetri). Pasta was not combined with tomato sauce until after tomatoes were brought back to Europe from the New World. Tomatoes were thought to be poisonous because they are members of the nightshade family, so they did not catch on as a food till the early nineteenth century (Demetri). The other popular dish associated with Italian cuisine is, of course, pizza, which has an ancient history. This seasoned flatbread has a long history, as the ancient Greeks and Phoenicians ate flatbread made from flour and water, which was cooked and then seasoned with herbs. The Greeks called their early version of pizza "plankuntos" and it served as an edible serving plate (History of Pizza).
